Olives are small fruits of an olive tree occurring naturally in the Mediterranean climate of Italy, Greece and Spain. Fresh olives are bitter and tart. Therefore, those intended for eating are fermented, i.e. they are simply kissed.
The color of the olives indicates their degree of maturity. Green olives are least mature. Then brown olives are harvested and at the end of the season olives with a dark-violet or black color are collected.
